I found a good site with lots of how-to info on making countertops with glass aggregate. They use Portland cement, but you could use the same basic process to make geopolymer countertops, bricks, pavers and many other things. Making pavers would be a perfect beginner project. You could make sample pavers with various recipes and use them in your yard. Allow sufficient time to see how well they hold up.

Their process describes how to make concrete countertops the traditional way with glass throughout the mix. To conserve materials you can sprinkle the glass on top as you do your finish troweling. My countertop article explains how I make cast in place $2,000 countertops for $20, with no transporting or flipping required. I didn’t use glass, only iron oxide pigment, but you could use the same process and sprinkle crushed glass on top.
